New Year's Day Food

from memory:
2 cups black eyed peas (dry)
water to cover
black pepper
salt
2 onions chopped
mustard greens (collards if available)
2 ham hocks - after 90 minutes, remove and chop meat; return to pot
optional garnish:
red wine vinegar
hot sauce

Flavor intensifies for January 2.

heat oven 375
1 1/4 c milk (warmed) with 1 tbs white vinegar
melt 2 tbs butter in cast iron skillet or 8x8 baking dish
mix:
1 1/2 c cornmeal
1/2 c flour
1 1/2 tbs baking powder
1 tsp salt
1 tbs sugar
add egg to soured milk and stir into dry ingredients
pour into 8x8 or cast iron skillet
bake about 34 minutes
